100% Chardonnay grapes grown from our own vineyards in Pramaggiore. The vineyard is situated 25 – 40 metres above sea level with medium texture and clayey soil. Guyot is the growing method used.
The grapes are harvested manually during the first ten days of September and then undergo brief pre-fermentative maceration at controlled temperature. The resulting must be transferred to steel vats where fermentation is completed over 10 days at a controlled temperature of 18-20 °C on carefully selected yeasts. The wine is then placed in 700 litre French oak barrels to mature until bottling. It then stands in the bottle for three months.
Straw colour that intensifies as the wine ages. A wine with innate elegance; its scent recalls flowers and white pulp fruit with pleasant hints of vanilla. It has well-balanced, powerful flavour, pleasantly lingering with a mineral tang.
White wine with a unique mix of power and elegance. Goes very well with highly flavoured entrees, fish risottos, light fish dishes and white meat.
